Especially as I try to save $$$ on groceries.
I came across this recipe at M*rtha's web site and she has it under a quick and easy category. Normally, she and I don't always agree on what is easy...LOL
This was pretty easy, maybe not super quick if you are feeding 6 but not too time consuming.
I remember making a similar recipe back in G*rl Scouts a million years ago. : )
(multiply ingredients by how many people are in your family)
Scrambled Egg in the Hole
1 large egg
salt and pepper
1 slice of crusty Italian bread (1 inch thick)
1/2 T. butter
1/2 ounce cheddar cheese, grated
In a small bowl, whisk together egg and 1 tsp. cold water, season with salt and pepper. Using the rim of a small glass, cut a hole in the bread. Discard the cut out. (or feed it to whatever kiddo walks by) In a large nonstick skillet, heat butter over medium until foaming. Place bread in skillet; carefully p0ur egg mixture into hole (if egg leaks out of the bread, use a spatula to push it back). Sprinkle egg with cheese. Cook until egg begins to set, 3 or 4 minutes; gently flip bread and egg. Continue cooking until egg is set, 1 or 2 more minutes.
I served it with asparagus and hash browns. It was great!

Sounds good! We toast the bread and DIP it in the egg!
