Lunchtime!

Something new we've been doing this year is to have each kiddo take a turn making everyone lunch one day a week.
It's been great. It has cut down on the mess and it made our lunchtime smoother.
It has meant eating a lot of mac and cheese or pbj's at times. ; )


We all hope that when it's Joy's day she'll make her Pita Pizza's.


6 whole wheat pitas
pizza sauce
mozzarella cheese
pepperoni (or roasted veggies is great!)


Lay pitas out on a cookie sheet. Spread with pizza sauce, cheese and pepperoni. Mom's favorite is spread with roasted yellow peppers. (yum!) Bake at 375 for 10 min.
(its ok if the pitas are rather curled on the onset because after baking they flatten out nicely)

Feta quesadillas

I love veggie quesadillas!!! And when I saw this version, I had to try it!

You take thawed frozen spinach and feta cheese and put it them in between two tortillas and lightly fry them.
Yum!

This isn't one I make for my kiddos though. : ) They aren't into spinach!

our lunches are usually left overs from the night before!! Maybe when I have kids old enough to be in the kitchen (several of them!) I won't have to cook and there will be a lot more creativity going on!! . . . then again it could be a whole lot more mac & cheese and PB & J's too!! LOL!
